The Taste of Fall in a Cake – Cranberry Apple Pumpkin Pecan

This past month I’ve been all about apples however there are so many other great flavors of autumn including cranberry, pumpkin, and pecan. This got me thinking what if there was a way to combine all these amazing autumn flavors into a single dish.

That’s when I came up with Cranberry Apple Pumpkin Pecan Cake. At first mixing, all these different flavors sound like it could be a disaster. However, doing a quick search on Pinterest I discovered that this type of cake is nothing new. There are several recipes for such a cake.

All autumn flavors in one cake

For my version of this cake, I sort of came up with my own recipe that would start with a cake mix as a base. Using a cake mix makes this cake a little more of a quickie bake, more so anyways than if I started from scratch.

Cake
  1. 1 yellow cake mix
  2. 4 eggs
  3. 1/3 cup Buttermilk
  4. 1 can (15 oz) pumpkin (not pumpkin pie mix)
  5. 2 teaspoons pumpkin pie spice
Cake Filling
  1. 1 cup apple pie filling (see my recipe https://goo.gl/jUwLSR)
  2. 1/2 cup sweetened dried cranberries
  3. 3/4 cup finely chopped pecans
Maple Glaze
  1. 1/2 cup pure maple syrup
  2. 2 tablespoons butter
  3. 2 tablespoon milk
  4. 1 teaspoon vanilla extract
  5. 1 cup powdered sugar
Instructions
  1. Preheat your oven to 350°F (325°F for dark or nonstick pans).
  2. Make the apple pie filling as directed (https://goo.gl/jUwLSR) toss in the dried cranberries and chopped pecans. Blend well.
  3. In a large mixing bowl, shift together the cake mix and pumpkin pie spice.
  4. Using an electric mixer blend the cake mix with the pumpkin, eggs,and buttermilk until well blended.
  5. Fold the cake filling into your batter.
  6. Pour cake batter into greased bundt cake pan and cook for 40-50 minutes
  7. In a small saucepan over medium heat, bring maple syrup, butter and milk to a boil. Stirring consistently for about 2 minutes.
  8. Remove from heat and mix in the vanilla extract.
  9. Gradually mix in the powdered sugar until smooth. Let cool slightly.
  10. Once cake is cooled pour the glaze on top. Garnish with tossed pecans.

The Taste of Fall

This cake was pretty easy to put together and the outcome was amazing. The mix of the cranberries, apples, and pecans within the pumpkin cake mixture give it such a rich flavor. While I don’t usually care too much for the frosting I really like the addition of the maple frosting drizzled on top.

The maple frosting was also delicious

I took the finished cake to work and my co-workers said that it reminded them of a fruitcake but not too dense. Instead, it had a moist and light taste to it.

I really think this cake is the perfect mix of all the best flavors of autumn and can definitely see it becoming an autumn must bake dish.
