White Chocolate Cranberry Oatmeal Cookies a Holiday Recipe

Thanksgiving always gets me in the mood for pie, while Christmas time makes me crave a good Christmas cookie! 

Sugar, ginger, snickerdoodle, there so many varieties of cookies and they seem to be at every holiday function and event.

With that said I thought I’d share a cookie recipe that is very fit for the season, but something a little different. 

White Chocolate Cranberry Oatmeal Cookies

Many people have mixed feelings about oatmeal cookies, I think it’s the raisins, don’t worry this recipe is raisin-free.

These cookies are a twist on a classic

Instead of raisins, these oatmeal cookies are filled with seasonal appropriate craisins (dried cranberries) and festive white chocolate chips. 

Cranberry White Chocolate Oatmeal Cookies
Yields 2
Holiday twist on a traditional soft chewy oatmeal cookie by using dried cranberries and adding white chocolate chips.

Ingredients
  1. 1 cup flour
  2. ½ teaspoon baking soda
  3. ½ teaspoon ground cinnamon
  4. ¼ teaspoon salt
  5. ½ cup softened butter
  6. ½ cup brown sugar or Splenda Brown Sugar blends
  7. ¼ cup sugar or Splenda
  8. 1 large egg, room temperature
  9. 1 teaspoon vanilla extract
  10. 1and ½ cups old-fashioned rolled oats
  11. ¾ cup dried cranberries
  12. ¾ cup white chocolate chips
Instructions
  1. In a large bowl sift together flour, baking soda, cinnamon, and salt. Set aside.
  2. Preheat your oven to 350 degrees.
  3. In a mixing bowl beat butter, brown sugar and sugar until well blended.
  4. Mix in the egg and vanilla into the sugar mixture.
  5. Slowly mix in the dry ingredients to the wet, until fully combined.
  6. Fold in the oats, cranberries and white chocolate chips.
  7. Using a 1-inch cookie scoop, drop cookie scoops on to a parchment-lined baking sheet.
  8. Bake in for 10-13 minutes.

Another nice factor about these cookies is that being oatmeal based they are somewhat good for you, right? I’m going to stick with that theory and the possibility that they can also be considered breakfast. 

A Holiday Treat

This recipe makes up a delicious softy an chewy oatmeal cookie with a great brown sugar and cinnamon flavor. 

The addition of the cranberries and white chocolate gives these cookies added interest and a fun holiday flavor.

I made a variety of holiday cookies recently for a family get together and while they enjoyed them all, these White Chocolate Cranberry Oatmeal Cookies were defiantly the hit of the party. 

In fact, I had to nearly fight to get a few to take back home with me. They were eaten and collated by everyone who attended.

Christmas Cookies

While these aren’t your traditional Christmas cookies they really are a nice addition to the holiday season.
