Earlier this month I mentioned participating in the Tiki/Hawaiian Dress sew along. Well, I’ve been Pinteresting to get inspiration. I don’t know about you but Tiki and Hawaiian seem to bring to mind a lot of imagery of pineapples.
Anyways, seeing all these pineapples made me want to make something with pineapples. I thought about a pineapple upside down cake. However, there no really reason for me to make a big cake, when it’s just me and my hubby.
Brunch Time Twist
By now you probably know how much I love my weekend brunch. It’s really the only time of the week I get to make a lavish meal.
While I said earlier there’s no reason for me to be making a big cake, that doesn’t mean I can’t make pancakes.
Then it hit me why not make Pineapple Upside Down Pancakes. It makes perfect sense , and would be a really great brunch time treat.
Pineapple Upside Down Pancakes
For this recipe I started with a brown sugar pancake base. I decided to add pineapple juice to my pancake batter to give it lots of pineapple flavor.
- 2 cups all purpose flour
- 2 tablespoons baking powder
- 1 teaspoon kosher salt
- ½ cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cups milk
- 1/4 pineapple juice
- 5 tablespoons butter, melted
- Pineapple rings , drained 15 oz
- Maraschino cherries
- 3tbs of brown sugar
- 2tbs Butter
- In a large bowl sift and whisk the flour, baking powder, salt and brown sugar together.
- In separate bowl whisk the eggs, vanilla, milk and ¼ cup of pineapple juice together.
- Add the wet ingredients into the dry and mix until just combined. Lastly mix in the melted butter and stir until combined, the batter will be slightly lumpy.
- Let the batter rest, while you heat up a skillet on the stove.
- In a microwave safe measuring cup, melt about 2 tablespoons of butter. Mix 3 tablespoons of brown sugar to the butter.
- Scoop out 1/3 cup of pancake batter onto the hot skillet. Place a pineapple ring in the center of the batter. Place maraschino cherry in center of pineapple ring. Drizzle with a little a little of the butter/brown sugar mix.
- Cook until the edges are set and bubbles form on top of the pancake Flip and cook until browned.
- Serve warm with syrup or cool whip topping.
Tropical Delight
So, how were my pineapple upside down pancakes? Amazing!
First off, the pancake batter even without the topped pineapple ring, had a great pineapple taste to it, since I added the juice. My hubby loved the flavor.
It was like eating dessert for breakfast (well, brunch anyways). I love how fresh and fruity these pancakes were and plan on making them again, soon.
