So continues my 12 days of cookies, saga. We’ll sort of.
Originally day three was supposed to be Pumpkin Cookies. I started by following the Melt-in-Your-Mouth Pumpkin Cookies, by Better Home and Gardens magazine. I followed the recipe but alas, ultimate FAIL!
The cookies were dry and just nasty. In the end I had to scrap the whole batch.
The failure of the pumpkin cookies, put me in a down mood. Also, I was out of ingredients, so I couldn’t make anything else.
Tuesday I went to the store to get more cookie ingredients, but after I returned home I decided to take a day off from baking.
I decided to skip the pumpkin cookies. Now on the 5th day of Christmas I decided to bake Hershey Holiday Cookies. These are festive sugar cookies with a Hershey kisses in the middle.
This cookie was super easy, it’s made of a cake mix. As always I try to keep it sugar-free, so I used Pillsbury Sugar Free Cake mix.
- 1 boxed cake mix
- 1egg
- 1/4 cup water
- 1/4 cup oil
- Hershey Kisses
- Preheat the oven to 350 degrees.
- Mix ingredients in blender.
- Scoop dough in 1/2 tablespoon scoops and roll into ball.
- Press cookie ball into colored sugar, then place on cookie sheet.
- Bake for 10-13 minutes.
- Remove cookie from sheet, and top with Hershey kiss while cookie is still warm.
- Then let cookie cool.
- I used Pillsbury sugar-free cake mix
After rolling the cookie balls and then pressing them in the colored sugar, they are placed on a cookie sheet to bake.
When the cookies come out of the oven I topped them with a Hershey Kiss. On the Internet you might find these cookies topped with white and red striped Hershey Candy Cane Kisses.
However, I can’t stand mint. I thought chocolate kisses would be not as colorful and while I wasn’t going to use the candy cane Kisses, I opted to go with Hershey Hugs. Basically they are Hershey Kisses made with white chocolate and chocolate chocolate stripe.
They came out beautifully and delicious.
