Christmas Cake

In just about every anime I’ve watched the characters always celebrate with an adorable strawberry shortcake, there’s even usually a joke about who gets the strawberries on top. In on of my favorite anime’s Keroro Gunso (Sgt. Frog) this cake appears furring Christmas time and is topped with a chocolate Santa. In one episode, the characters get shrunken down to battle on top of the cake to see who will get the Santa, on their slice.

Given the fact that the cake seems to be so popular I decided to do some research on it. I discovered the cake is typically a Christmas Eve treat and is basically a strawberry short cake made with a sponge cake. This particular type of sponge cake is know as Castella or Kasutera, and originally has a Portuguese origin. This type of cake is usually made of sugar, flour, eggs, and starch syrup or honey.

The recipe for the cake was quite simple. However, when I pulled the cake out of the oven I was a little worried, because the cake was so flat. It also wasn’t quit as fluffy as I thought it should be. Never the less I continued on with making the filling.

Finally came the fun part, the assembling of the cake.

I could never find a chocolate Santa for the cake, but I did find a fruit gummy Santa and he worked fine.

Here’s the cake all decorated. I’m not sure why I placed it on the lemon tray, but I think it was the only tray I that didn’t already have a pie on it.

In taste the cake was okay, a little dry but all the cream filling made up for it. I think I’ll have to try this recipe again and see if I can improve it.
