How to Make Lemon Berry Pie for Your Next Cookout

It’s finally summer and that means it’s the season for picnics and cookouts. If you just so happen to be in need of a quick and easy dessert for such a get-together then I have a recipe for you!

Lemon Berry Pie

One of my favorite summer pies is my very own Lemon Berry Pie. I invented this recipe a few years ago when I wanted to make something other than my most requested key lime pie, for a family event.

This pie features a richer texture than my key lime pie, as it is basically a no-bake cheesecake with the main ingredients being lemon jello, cream cheese, and cool whip.

Neufchâtel Cheese Or Cream Cheese

As I said before this recipe is basically a no-bake cheesecake, which is typically made with cream cheese. Though, I personally prefer baking with Neufchâtel cheese rather than regular cream cheese.

Neufchâtel cheese is a French cheese that is basically similar to regular cream cheese in taste and texture. However, Neufchâtel cheese contains a third less fat than regular cream cheese and it’s still all wholesome cheese goodness. I also feel like Neufchâtel cheese is slightly creamier, but that could just be me.

Whether you prefer Neufchâtel cheese or cream cheese either one will work fine with this recipe.

Ingredients
  1. 1 graham cracker crust
  2. 8 oz. Neufchâtel cheese (or cream cheese)
  3. 8 oz Sugar Free Cool Whip
  4. 2 small packages or 1 large package of Sugar Free Lemon Jell-O
  5. 1 cup boiling water
  6. Raspberries
  7. Strawberries
  8. Blueberries
Instructions
  1. Mix boiling water with Jell-O until completely dissolved.
  2. Blend in Neufchâtel cheese into the Jell-O with a mixer.
  3. Fold in the Cool Whip.
  4. Pour mixture into graham cracker crust.
  5. Let chill a few minutes.
  6. Chop Straw berries and raspberries then mix together with blueberries.
  7. Top berry mixture on to pie.
  8. Refrigerate 2-3 hours before serving.

Topped with Berries

Now, what would lemon berry pie be without berries? I suppose a lemon cheesecake, but that’s not what makes this pie special. It’s the combination of lemon and berries.

I really love topping this pie with strawberries, blueberries, and raspberries. What’s nice though, is that you can really change up this pie by choosing to top with seasonal berries. Maybe a late summer early fall topping of blackberries, mulberries, and boysenberries?
